Caribbean Haiti Food Spicy Apple Crumbs
HAITI FOOD RECIPES INGREDIENTS
For the filling:
  • 1kg Peeled, and sliced cooking apples of your choice
  • 60g Brown cane sugar
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Ground Cloves
  • 1 tsp Ginger
  • 1 tbl spoon water
  • 2 tbl spoons Ginger Wine
For the Crumble:
  • 200g Plain Flour
  • 50g Oats
  • 80g Butter (make sure it is at room temperature)
  • 100g Brown Cane sugar
HAITI FOOD RECIPES INSTRUCTIONS
Pre heat oven to 180 degrees centigrade,(around 350 degrees Farenheit)
Place the flour and oats in a large mixing bowl, then roughly chop and add the butter.
Lightly rub the butter into the flour and oats using your fingertips.
When it has all been incorporated add the sugar and combine with the other ingredients again using your fingertips for best results.

Put aside.

Put the apples, wine, sugar and spices in a large enough pot and cook very gently on a low heat until the apples have cooked down and are soft and translucent.
Spoon the apple mixture into a pie dish.
Sprinkle the crumble mixture evenly on top of the apple, lightly spreading it out with your fingers.
Cook for aprox 30mins or until the topping is golden brown.

Serve the Haiti food recipe of spicy apple crumbs warm or cold, with cream, or ice cream.

Haiti Food Recipe Ingredients:
  • 2 pounds white sweet potatoes, peeled and cut
  • 1 large banana, peeled and cut in 1 inch pieces
  • 1 cup brown sugar
  • 1/2 cup seedless raisins
  • 1 teaspoon grated ginger
  • 1/4 teaspoon salt
  • 12 ounces evaporated milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon grated nutmeg
  • 1 teaspoon ground cinnamon
  • rind of 1 lemon, grated
  • 1 1/2 cups coconut milk
  • 3 teaspoons butter
Haiti Food Recipe Instructions:
Preheat the oven to 375 degrees.
Grate sweet potatoes into mixing bowl and mash the banana into sweet potatoes.
Add all ingredients (except 1 tablespoon brown sugar) mixing each ingredient at a time until each ingredient is fully blended into the mix.
Spread evenly into 9x13 inch baking pan and sprinkle remaining 1 tablespoon brown sugar over the top of the pudding.
Bake for 1 1/2 hour or until toothpick inserted into center comes out clean.

HAITIAN PATTIES

HAITIAN PATTIES

Haiti Food Recipe Ingredients
  • 1 cup cold water
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 1 cup vegetable shortening and ¼ cup butter mixed together
  • 1 egg yolk, beaten
  • 2 teaspoons of parsley
  • 2 chopped shallots
  • 1 chopped garlic clove
  • 1 lbs pound ground beef, seasoned
  • 1 tablespoon of beef or broth
  • Hot pepper to taste
Haiti Food Recipe Instructions:

1.Pound to paste the parsley, pepper, shallot, and garlic.
2. Add seasoning paste and broth to cooked beef and mix well.
3. Cook covered on medium heat for 10 minutes. Stir constantly.
4. Uncover until liquids are absorbed. Now filling is ready.
5. Place flour in a large mixing bowl and make a whole in the center. Pour in water and salt. Mix lightly with a spoon without kneading. Place dough in refrigerator 30 minutes.
6. Roll the dough into a rectangle 1/4 inch thick. Spread half the shortening mix on the dough. Fold one side over the middle and spread this section with the remaining shortening. Fold over the remaining section and again roll out to 1/4 inch thickness. Fold again into thirds and roll out. Repeat this rolling process a third time. Refrigerate dough overnight.
7. Roll the dough to about ½ inch thickness. Cut the dough into 2 1/2 inch rounds.
8. Place a tablespoonful of beef on one side of the dough rounds. Fold and lightly press ends together. Place the patties on a baking sheet. Brush the . Cover with remaining rounds, pressing the edges down. Brush the tops and edges of the patties with egg yolk before placing in the oven. Place a pan of water on the bottom rack of the oven.
9. Bake at 400 F 30 minutes, then turn the oven control to 300 F and bake 20 minutes, or until golden brown.
